Why choose the Ispica new carrot? For the precocity of its ripening, for its size, for the organoleptic and chemical qualities, that is the richness of carotene and glucose.
The particular combination of pedoclimatic and productive factors in the area delimited by the production disciplinary, in fact, allows the territory to express itself at its best, allowing the product to have a series of characteristics that make it unique.
High winter temperatures and hours of sunlight, in particular, are those that favor a more intense color, a more regular conformation and an optimization of the contents in sugars, vitamins and mineral salts.
It reaches the consumer after completing the ripening cycle in the open field. It is rich in beta carotene (vitamin A) and other vitamins of group B, PP, D and E, which are precious for the eyes and for the skin. It has a strong antioxidant action that fights free radicals, helps in weight loss diets.
The Carota di Ispica Igp reaches commercial ripeness as early as the end of February (February 20), hence “Novella”, and is on the market until the beginning of June. It can therefore be found on the market, fresh and crunchy, with an intense aroma and herbaceous aroma, in winter and spring. An important strength of the product that can reach national and international markets with a certain advance compared to other productions, bridging the production gap of some countries with taste and quality.

DESCRIPTION
Carota Novella di Ispica PGI is a fresh vegetable belonging to the Daucus carota L. species, in the varieties deriving from the Carota Semilunga Nantese group and related hybrids.

PRODUCTION AREA
The production area of Carota Novella di Ispica PGI includes some municipalities in the provinces of Ragusa, Syracuse, Catania and Caltanissetta, in the Sicily region.

METHOD OF PRODUCTION
Before sowing the soil is properly prepared with plowing that creates 40-50 cm deep furrows. Sowing is carried out in autumn with pneumatic precision seeders; followed by the "rolling" which buryes the seeds at a depth of 1 cm. The use of fertilizers is allowed as long as they are mixed-organic or based on meso or micro-elements. “Weeding” operations can also be carried out in order to eliminate weeds, improve the softness of the soil and distribute fertilizers in the best possible way. Harvesting takes place daily from February 20 to June 15, with the aid of harvesting machines capable of passing only once on the ground. The fresh product is then washed, selected and packaged in the production area.

APPEARANCE AND TASTE
The Carota Novella di Ispica PGI has a cylindrical-conical shape, a diameter ranging from 15 to 40 mm and a weight between 50 and 150 g. It is clean, shiny on the surface; without apical root and secondary rootlets, without visible cracks; the orange color is particularly intense. The pulp is tender and crunchy while the innermost part is fibrous. The flavor is typical of carrots; the scent is intense with herbaceous notes.

GASTRONOMY
Carota Novella di Ispica PGI should be kept in a cool place, preferably in the refrigerator on the shelf where the vegetables are usually placed, wrapped in a slightly moistened cloth. In order not to lose its nutritional qualities, the ideal is to consume it raw, in pinzimonio or in salads, or steamed. In the kitchen, it is one of the most popular ingredients and each recipe requires a particular cut. It goes well with other vegetables, served in salads or in hot dishes. It is famous for its use in the preparation of desserts, soups, caponata and jams. It is also tasty fried, boiled or sweet and sour cooked.

DISTINCTIVE NOTE
Having reached maturity at the end of February, the Carota Novella di Ispica PGI stands out from other carrots for being a typically early winter-spring product, for this reason defined as “novella”, with excellent chemical and organoleptic characteristics.
